Spicy Prawns in Avocado sauce

 

Ingredients

  • 12 smalls Prawns
  • 1 tablespoon paprika
  • 1 tablespoon Curry powder
  • Ground cayenne pepper
  • 2 pinches s Salt
  • 1 Avocado
  • 1 teaspoon Lemon Juice

Directions

  • Mix the avocado and the lemon juice
  • Add salt, cover and place in the fridge. Prepare the serving vessels
  • I use apetizer spoons, but small glasses (verrines) work well
  • 15 minutes before guests arrive, place a small quantity of cold avocado mixture in the serving vessels. Mix the paprika, curry powder, cayenne pepper and salt
  • Add the prawns to the mixture and make sure they are well coated
  • Add butter or oil to a warm non-stick pan
  • When melted, cook the prawns until done (about 4-7 minutes)
  • Remove the prawns from the pan, and pick them into the avocado mixture, tail up. Serve immediately.
